Ingredients

2½cupsmixed berries,fresh, such as blackberries, blueberries, raspberries

3eggs

10tbsplight agave nectar,or sugar

½cupall-purpose flour,unbleached, sifted

⅛tspsalt

1cupmilk

2tspvanilla extract

powdered sugar,for dusting

baking spray

Preparation

Preheat the oven to 350 degrees F.

Lightly spray a baking dish with baking spray, then it dust with a little flour. Toss in the berries.

Whisk the eggs, agave, salt, and flour together in a bowl until smooth.

Add the milk and vanilla extract, then whisk until smooth.

Pour the mixture into the baking dish.

Bake for 45 to 50 minutes or until lightly browned.

Cool on a wire rack. The clafoutis will have puffed up a bit and will deflate while cooling.

When cool, dust with powdered sugar, serve, and enjoy!
