Ingredients

5lbschuck roast

2tbspcanola oil

2tspkosher salt

1tspblack pepper,coarse ground

1tspdried thyme

1lbcarrots,peeled, cut into 2-inch chunks

2lbsyukon gold potatoes,peeled, cut into large chunks

2garlic cloves,minced

2cupsbeef broth

Preparation

Preheat the oven to 325 degrees F.

Season the chuck roast with the salt, pepper and thyme.

Add the canola oil to a pan, then allow to heat.

When the oil ripples and is hot, add in the roast, then brown it deeply for 4 to 5 minutes on each side.

Add the carrots, potatoes, garlic and beef broth.

Cook for 3 to 3½ hours.

Serve warm, and enjoy!
