Ingredients

2 cups leaf lettuce, torn

2 cups chicken, cooked

½ cup cucumber, seeded and cubed

1 cups cantaloupe, and/or honeydew melon, cubed

3 tbsp green onions, thinly sliced

⅓ cup lemon juice

2 tbsp olive oil

2 tbsp water

1 tbsp granulated sugar

salt and ground white pepper, to taste

Preparation

In a large bowl, toss together the melon, cucumber, and green onions. Mix to combine and set aside.

In a mixing bowl, combine lime juice, oil, water, and sugar. Whisk until evenly incorporated.

Season to taste with salt and pepper. Adjust accordingly.

Pour the dressing over the melon mixture. Toss lightly to coat. Set aside and allow to macerate for at least 15 minutes.

Divide lettuce among 3 dinner plates, roughly ⅔ cup each.

Portion the melon mixture next to the lettuce, roughly ⅓ cup each.

Arrange chicken around the edges of plates, roughly ⅔ cup each.

Drizzle remaining dressing over chicken and serve. Preferably chilled.
