Ingredients

2 tbsp olive oil

1 cup yellow onions, diced

2 ½ lb brisket

4 cups beef broth

½ lb. baking potatoes, preferably Yukon Gold

3 cups carrots, diced

¼ lb. green beans

3 sprigs rosemary

3 sprigs thyme

½ tbsp salt

½ tbsp pepper

Preparation

Preheat the oven to 275 degrees C.

Heat olive oil in a pot.

Add onions and sauté. Remove onions when cooked and set aside.

Using the same pot, add brisket. Cook on all sides. When cooked, remove and set aside.

Add beef broth, potatoes, carrots, green beans, onions, beef broth, rosemary, thyme, salt, and pepper in the same pot.

Cover pot and bake in the oven for 1 ½ hours to 2 hours.

Slice the brisket into medium-sized pieces. Serve and enjoy while hot!
