Ingredients

1¼cupsall-purpose flour

1¼cupscorn flour,not cornmeal, cornstarch or masa harina

1tspbaking powder

¼tspbaking soda

½tspsalt

1cupgranulated sugar

½cupbutter,softened

1egg

1egg yolk

¼cupsour cream

1tspvanilla extract

1tsplemon juice

½cupbutter,softened

⅓cuphoney

2cupspowdered sugar

⅛tspsalt

Preparation

Preheat oven to 350 degrees F.

In a mixing bowl, whisk together all-purpose flour, corn flour, baking powder, baking soda, and salt. Set aside.

In the bowl of an electric mixer whip together butter and sugar until light and fluffy for about 3 to 4 minutes.

Stir in egg and egg yolk. Mix in sour cream, vanilla, and lemon juice. Slowly add in dry ingredients and mix until well incorporated.

Form dough into balls by the heaping tablespoon fulls then place on cookie sheets and flatten dough balls evenly to about ½ inch.

Bake in preheated oven for 9 to 11 minutes. Allow to cool completely before frosting with honey butter frosting.

In a large mixing bowl, using an electric mixer, whip together all ingredients for about 1 to 2 minutes until light and fluffy.
