Ingredients
3cupsrye bread cubes,cut into ¼ inch cubes
1½tbspcooking oil
¾tspsalt
½tspfresh ground black pepper
½cupmayonnaise
2tbspketchup
dashworcestershire sauce
1tbsppickle relish
1egg,hard cooked
3scallions
¾lbgreen leaf lettuce,(1 head)
1lbiceberg lettuce,(½ head)
½lbcorned beef,sliced
Preparation
Heat the oven to 350 degrees F. Put the bread cubes on a baking sheet and toss them with the oil and ¼ teaspoon each of the salt and pepper.
Bake, stirring occasionally, for 5 to 10 minutes, until the croutons are crisp and starting to brown.
In a small bowl, whisk together the mayonnaise, ketchup, Worcestershire sauce, ¼ teaspoon of the salt and the remaining ¼ teaspoon of pepper. Add the pickle relish, the egg, and the scallion bulbs and stir to combine.
In a large bowl, toss together the lettuces, scallion tops and corned beef.
Serve topped with the dressing and the croutons, and enjoy!
