Ingredients

16 oz cottage cheese, (1 package), large curds

2 tbsp apple cider vinegar, or any vinegar

2 tbsp olive oil, plus more for drizzling

2 tbsp honey

ground black pepper, to taste

1 small daikon radish, diced

2 medium-sized cucumbers, seeds removed, diced

2 cups cherry tomatoes, sliced in half

lemon wedges, optional

Preparation

Combine the vinegar, honey, olive oil, and black pepper in a bowl. Whisk until combined.

In a chilled large bowl, gently mix the cottage cheese, radish, cucumbers, tomatoes, and honey vinegar dressing.
