Ingredients

¾cupyogurt,plain nonfat

¼cupextra virgin olive oil

2tbspwhite wine vinegar

2scallions

1garlic clove

½tspfreshly ground pepper

salt

Preparation

Scoop the yogurt into a paper towel-lined strainer set over a bowl. Let stand at room temperature for 30 minutes.

In a mini food processor, combine the drained yogurt with the olive oil, vinegar, scallions, garlic and pepper; process until smooth. Season with salt.

Serve as a dipping sauce or over salads, and enjoy!
