Ingredients

8ozdry pasta,linguine or spaghetti

1tbspvegetable oil

1tspginger,grated

2clovesgarlic,minced

½cupcarrots,julienned

1½cupscabbage,thinly sliced

¼cupbean sprouts,optional

green onions,for garnish

cilantro,for garnish

peanuts,for garnish, crushed

½cupchicken broth

2tbspsoy sauce

2tbspcreamy peanut butter

1tspSriracha,or to taste

1½tspsesame oil

1tbspbrown sugar

¼tspred pepper flakes,crushed, optional

Preparation

Combine sauce ingredients in a small bowl. Set aside.

Cook pasta according to package directions. Drain well, do not rinse.

Meanwhile, cook ginger and garlic in vegetable oil until fragrant.

Add carrots and cabbage and cook for 2 to 3 minutes or until slightly tender. Add sauce ingredients while stirring over medium heat and simmer for about 2 to 3 minutes until thickened.

Stir in noodles and bean sprouts. Garnish with crushed peanuts, cilantro, and green onions.

Serve and enjoy.
