Ingredients

1tbspolive oil

3garlic cloves

8ozrotini pasta

14ozdiced tomatoes,with juice

3tbsptomato paste

1tspItalian seasoning

½tspchili flakes,optional

3cupswater

2cupschicken,chopped, cooked, or leftover chicken

2tbspfresh parsley,chopped

⅔cupheavy cream

1ozparmesan cheese,fresh

salt and pepper,to taste

6ozmozzarella cheese,shredded

Preparation

Heat the oil in a large oven-proof skillet.

Add the garlic, then cook until fragrant.

Stir in the pasta, canned tomatoes, tomato paste, seasoning and 2½ cups of water.

Let simmer, uncovered, for 9 to 11 minutes until the pasta is cooked, adding water if needed.

Stir in the heavy cream and chicken.

Let simmer for an additional 1 to 2 minutes or until slightly thickened.

Remove from heat, then stir in the parsley and parmesan cheese.

Top with mozzarella cheese, then broil until bubbly and lightly browned.
