Ingredients
15ozchickpeas,canned, drained
olive oil spray
⅛tspkosher salt
¼tspchili pepper powder
¼tspcumin,ground
¼tsppaprika
¼tspcoriander,ground
¼tspcurry powder
¼tspgarlic powder
Preparation
Preheat oven to 375 degrees F.
Drain chickpeas in a colander and let them dry completely. Pat dry with a paper towel if needed. You may opt to leave them on the counter for 1 hour to make sure they are very dry.
Arrange the chickpeas into a single layer on a baking sheet and roast for about 35 to 45 minutes, shaking the pan every 10 minutes. They will be golden brown and crunchy on the inside when done, not moist.
In a medium bowl, combine all the spices.
Remove the chickpeas from the oven once it’s done, and spray with olive oil. Immediately toss with spices while hot.
Let cool and eat at room temperature.
