Ingredients
1¼ cups soy milk, unsweetened almond milk or any plant-based milk
1¼ cups all-purpose flour
3 tbsp coconut sugar, or turbinado
2 tbsp coconut oil , or any plant-based oil
2 tsp baking powder
2 tsp vanilla extract
1 pinch salt
Preparation
Preheat the waffle maker.
In a bowl, sift the flour and baking powder.
Add the sugar, salt, coconut oil, vanilla extract, and buttermilk.
Cream together to remove any lumps. Mix until well-incorporated.
Pour the batter into the waffle maker using a ladle, and cook for 5 to 7 minutes until golden brown.
