Ingredients

¾ cup pancake mix, preferably Bisquick

⅓ cup granulated sugar

½ cup brown sugar, packed

6 oz evaporated milk, (½ can)

1 tbsp unsalted butter, melted

2 eggs

2 cups peaches, or 3 fresh large peaches, canned, drained, mashed

2 tsp vanilla extract

¾ tsp ground cinnamon

cooking spray

2 oz ice cream, of your choice, preferably vanilla flavored, used ube flavor

Preparation

Grease a crockpot with non-stick cooking spray.

In a large mixing bowl, combine the sugars, pancake mix, cinnamon, eggs, vanilla extract, butter, and milk. Mix to combine.

Fold in the peaches until they are well-blended into the mixture.

Pour the mixture into the crockpot and cook on High for 2 to 3 hours.

Serve your peach cobbler warm, with ice cream of your choice. Enjoy!
