Ingredients
2tspchili powder
1tspsalt
1tspbrown sugar
1tspgarlic powder
½tspcumin
¼tspcayenne pepper
¼cupchicken brothlow sodium
3chicken breastsboneless and skinless
1red bell pepperthinly sliced
1green bell pepperthinly sliced
1yellow bell pepperthinly sliced
1onionthinly sliced
1cuptomato salsa
Preparation
In a small bowl, combine chili powder, salt, brown sugar, garlic powder, cumin and cayenne pepper.
In a 2 ½-4 quart crockpot, add broth and chicken breasts in a single layer. Sprinkle chicken with half of the seasoning.
Top with peppers and onion and season with remaining seasoning mix.
Add salsa and spread into a thin layer on top of the peppers.
Put the lid on and cook on low for 3 to 4 hours, or on high for 2 hours, until chicken reaches an internal temperature of 165 degrees F degrees.
Serve with tortillas, salsa, rice, sour cream, and cheese as desired. Serve and enjoy!
