How to make Crockpot Chicken Fajita Recipe-
Prepare all of the ingredients by having ingredients thinly sliced. NOTE: This can be done the night before as well. Cut the chicken breast into thin strands. Julienne the carrots and peppers into same thin strands. Cut onion in half and slice so the size is uniform with the carrots and peppers. Slice cleaned mushrooms. Finely chop fresh tomatoes. Once you are ready to start the cooking process. Into the bowl of the slow cooker, add the tomatoes and garlic. Then, all of the vegetables and chicken. Combine all the ingredients for the homemade fajita seasoning. Season ingredients and toss gently, add remaining seasoning and toss gently again. Close lid of the crockpot, set cooking time and enjoy! Refrigerate leftover chicken fajitas for 1 – 2 days. Reheat and enjoy with rice or as a salad over lettuce with sour cream and guac.
How long to cook Chicken Fajitas in a Crockpot?
If cooking on high, cook fajitas 3-4 hours. If cooking on low, cook fajitas 5 hours. Gently mix everything before serving. Chicken and vegetables will be SOO tender and juicy!
