Ingredients
20 oz chicken breast, boneless and skinless, halved
15 oz white beans, (1 can), or cannellini beans, drained
15 oz kidney beans, (1 can), drained
14 oz tomatoes, (1 can), diced or crushed
1 cup celery, chopped
1 cup carrots, diced
2 cloves garlic, small, coarsely chopped
1 cup chicken broth
½ cup white wine
3 tbsp tomato paste
1 tbsp brown sugar
1½ tsp italian seasoning
salt and ground black pepper, to taste
Preparation
In a medium bowl, combine chicken broth, wine, tomato paste, sugar, and Italian seasoning. Whisk until evenly incorporated.
Combine the chicken, beans, tomatoes, celery, and carrots in your crockpot.
Pour the chicken broth mixture over the chicken and vegetables, then add the garlic. Mix well.
Cover and cook on Low setting for 8 to 10 hours or on High for 5 to 6 hours, or until the vegetables are tender.
Season with salt and pepper to taste. Adjust accordingly and serve!
