Ingredients

¼ cup balsamic vinegar

2 tbsp olive oil

salt and ground black pepper, to taste

3 tbsp cilantro, fresh, chopped

lime juice, (from 1 lime)

15 oz black beans, canned, drained

8¼ oz sweet corn, kernels, canned, drained

2 cucumbers, (roughly 14 oz total), large, deseeded and diced

½ cup cherry tomatoes, halved

1½ oz tortilla chips, crumbled

1½ tbsp pepper jack cheese, or any Mexican cheese of your choice, grated

Preparation

In a small mixing bowl, combine balsamic vinegar, olive oil, cilantro, and juice from lime.

In a medium bowl, add black beans, corn and cucumbers.

Combine both mixed vegetables and dressing.

Adjust seasoning to taste with salt and ground black pepper.

Serve cold, garnished with tortilla chips and grated cheese.

To serve:
