Ingredients

5 oz tuna in water, drained

5 oz cucumber, sliced

½ cup yogurt, or sour cream, thick

½ cup mayonnaise, divided

1 tbsp lemon juice

2 tbsp red onions, minced

2 tbsp parsley, chopped

4 slices loaf bread

salt and ground black pepper, to taste

Preparation

In a mixing bowl, add drained tuna, yogurt or sour cream, half of your mayonnaise, lemon juice, red onions, and parsley.

Season with salt and pepper, then mix until evenly combined. Adjust seasoning to taste and set aside.

Assemble your sandwich. Spread roughly 1 tablespoon of mayonnaise on both sides of the bread.

Place roughly 6 cucumber slices per bread.

Spread roughly 2 tablespoons of tuna filling per sliced bread, followed by 6 more cucumber slices. Cover with the other sliced bread.

Trim the crusts off your loaf bread slice

Either slice these into halves or triangles. Serve.
