Ingredients

1cupdry pasta

8ozsalmon,skinned, cooked

½cupred or yellow onion,minced

1cupcelery,diced

1medium red apple,diced

½cupwalnuts or dry-roasted,unsalted peanuts, chopped

6ozfat-free yogurt

2tbspolive oil

1tbspcurry powder

2tspfresh lemon juice

2clovesgarlic,crushed

1tspdijon mustard

½tspsalt,or to taste

freshly ground black pepper,to taste

Preparation

Cook pasta per package directions; drain and rinse. In a large bowl, combine the first six ingredients. In a small bowl, combine dressing ingredients.

Pour dressing over salad; toss. Refrigerate, or serve at room temperature.
