Ingredients

8 oz penne, cooked and cooled

1 tbsp olive oil

3 cloves garlic, minced

4 tbsp butter, unsalted

¾ cup heavy cream

¼ cup chicken stock

½ cup vodka

½ cup Parmesan cheese, grated or powdered

½ cup Monterey Jack, Asiago or Provolone cheese, grated

½ lb shrimp, peeled and deveined

salt, to taste

Preparation

In a large skillet, heat oil over medium heat.

Saute the garlic and shrimp briefly. Set aside.

In another deep skillet, add in butter, cream, chicken stock and vodka.

Bring to a simmer, stirring occasionally.

Add cheeses, salt, and pepper.

Simmer for 5 minutes. Stir continuously to melt the cheese.

Mix in pasta and shrimp until evenly incorporated.

Allow it to simmer for an additional 5 minutes. Serve.
