Ingredients
1tbspolive oil
8ozlean ground beef
8ozbulk sausage
½cupchicken liver,minced, optional
1medium onion,diced
1green pepper,diced
1cupcelery,diced
3clovesgarlic,minced
1½tsp*cajun seasoning,(see Recipe Notes for recipe)
1½cupswhite rice,uncooked
3½cupschicken broth
2bay leaves
salt and pepper,to taste
green onion,for garnish
Preparation
Heat olive oil over medium high heat in a dutch oven or heavy bottomed pan.
Add beef, sausage, and chicken liver, if using. Cook until no pink remains.
Add onion, garlic, green pepper, celery, and Cajun seasoning. Stir for about 5 minutes until softened.
Add rice, broth and bay leaves. Bring to a boil, reduce heat and simmer covered for about 20 to 23 minutes or until rice is cooked.
Garnish with green onions and serve.
