Ingredients
6 oz mozzarella cheese, grated
3 egg whites
1½ cups bread crumbs, store-bought or homemade
1 cup cornstarch
¼ tsp ground black pepper
cooking spray
1½ cups tomatoes, canned, diced or crushed
2½ tsp Italian seasoning
salt and ground black pepper, to taste
Preparation
Preheat the oven to 400 degrees F. Grease your baking sheet with cooking spray, line with parchment paper, and grease once again with cooking spray.
Prepare your breading station by placing cornstarch and breadcrumbs in separate bowls.
In a mixing bowl, whisk together egg whites and pepper.
Form roughly 1-ounce mozzarella balls, then dredge each in cornstarch, dip in egg whites, and coat in breadcrumbs.
Repeat with the breading, this time only with egg whites and breadcrumbs. Repeat until you have coated all your mozzarella balls in this manner.
Place these onto your greased and lined baking sheet, inches apart from each other. Bake in the oven for 10 to 12 minutes or until golden and crispy.
While waiting, combine tomatoes and Italian seasoning in a saucepot and bring this to a simmer.
Season to taste with salt and pepper. Adjust accordingly and set aside in a warm area.
Once your mozzarella balls are baked and crispy, serve immediately with your quick marinara sauce.
