Ingredients
3bananas,very ripe
⅓cupunsalted butter,melted, cooled slightly
2tbspcooking oil
1large egg
2tsppure vanilla extract
¾cuplight brown sugar,packed
2tspbaking powder
½tspbaking soda
½tspsalt
1cupall purpose flour,or plain flour
½cupunsweetened cocoa powder,or Dutch processed for a richer taste
1cupsemi sweet chocolate chips,divided
Preparation
Preheat the oven to 350 degrees F. Grease a 9×5-inch loaf pan with nonstick spray. Set aside.
Mash the bananas in a large bowl. Mix in the melted butter and oil to combine. Whisk in the egg, vanilla, and brown sugar until smooth.
In another bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
Stir into the wet ingredients until just combined. Fold in half the chocolate chips.
Pour the batter into prepared pan and top with the remaining chocolate chips.
Bake for 50 to 55 minutes or until a toothpick inserted into the center of the bread comes out mostly clean.
Let cool in the pan for 10 to 15 minutes, then remove the loaf and place onto a wire rack to cool.
