Ingredients
2lbspotatoes,peeled, chopped
¼cupmilk
2lbsleeks,chopped
1lbground beef
1onion,chopped
1red bell pepper,chopped
1green bell pepper,chopped
1tbspgreen chili peppers,finely chopped
soy sauce,to taste
8ozcheddar cheese,(1 package) shredded
6ozham,cooked, cut into thin strips
Preparation
Preheat the oven to 350 degrees F.
Bring a large pot of salted water to a boil, and cook the potatoes for about 15 minutes until tender but firm.
Drain the potatoes, and transfer to a medium bowl. Mash together with the milk.
Place the leeks in a medium saucepan with enough water to cover, and bring to a boil.
Cook for 10 minutes, or until tender.
Drain, and set aside.
In a medium skillet over medium heat, cook and stir the ground beef until evenly browned.
Mix in the onion, red bell pepper, and green bell pepper.
Season with green chili peppers and soy sauce.
Continue to cook and stir until the vegetables are tender.
In a medium baking dish, mix the mashed potatoes, leeks, and ground beef mixture.
Sprinkle with the cheddar cheese, and top with ham.
Bake for 25 minutes in the preheated oven, until bubbly and lightly browned.
