Ingredients

2medium zucchini,sliced into ½-inch rounds

1tbspolive oil

½tspItalian seasoning

salt and pepper,to taste

⅓cupParmesan cheese,shredded, divided

Preparation

Preheat oven to 425 degrees F.

Toss zucchini slices with olive oil, seasoning, salt and pepper, and about 2 tablespoons of the Parmesan cheese.

Place on a baking sheet and top with the remaining Parmesan cheese. Bake for 5 minutes.

Turn oven to broil, place pan near the top, and broil for 3 to 5 minutes or until cheese is melted and zucchini is tender-crisp.
