Ingredients

3eggs,separated

⅓cupbutter,softened

⅓cupsugar

3tbspsugar

3bananas,ripe

1tspvanilla

¾cupflour

1½tspbaking powder

1tbsplemon juice

⅓cupbrown sugar

1cuphot water

Preparation

Preheat the oven to 375 degrees F.

In a medium bowl, beat the egg whites until foamy.

Add 3 tablespoons of sugar, then continue beating until stiff peaks form. Set aside.

In a bowl, combine ⅓ cup of sugar, butter, egg yolks, 2 mashed bananas, vanilla, and lemon juice until well combined.

Mix in the flour and baking powder.

Gently fold in the beaten egg whites.

Pour the batter into a casserole dish, then spread it out with a spatula.

Top the batter with the brown sugar.

Blend together 1 cup of hot water and the remaining ripe banana.

Bring to a boil over medium heat.

Pour the water and banana mix over the brown sugar, and do not stir.

Bake for 25 to 30 minutes or until set.

Serve warm with ice cream, and enjoy!
