Ingredients
⅓cuporange juice
3tbspsugar
3cupsfresh blueberries
⅔cupflour
¼tspbaking powder
1pinchsalt
½cupunsalted butter,softened
½cupsugar
1large egg
½tspvanilla extract
Preparation
Preheat the oven to 375 degrees F. Coat an 8×8-inch baking dish with baking spray.
In a large bowl, mix the orange juice with 3 tablespoons of sugar, then add the blueberries. Pour the batter into the prepared baking dish.
In a separate bowl, sift together the flour, baking powder, and salt.
In a stand mixer, cream the butter and ½ cup of sugar until light and fluffy. Mix in the egg and vanilla extract.
Mix the flour mixture into the batter gradually. Then, drop spoonfuls of batter over the blueberry mixture evenly.
Bake in the oven for 35 to 40 minutes, or until the topping is lightly browned.
