Ingredients

1cupold-fashioned oats

½cupalmond meal

⅓cupalmondssliced or slivered

¼cupmaple syrup

3tbspcoconut oilmelted

½tspsalt

5cupsfresh blueberries

2tsplemon juicefreshly-squeezed

2tsplemon zest

2tbspcornstarch

Preparation

Preheat the oven to 350 degrees F.

Add the oats, almond meal, almonds, maple syrup, coconut oil and salt to a mixing bowl, then toss until combined. Set aside.

Pour the blueberries into an 8 x 8-inch or 9 x 9-inch baking dish.

Sprinkle evenly with lemon juice, lemon zest and cornstarch, then toss until evenly combined.

Sprinkle the oat crisp mixture evenly on top of the berries.

Bake for 35 to 40 minutes, or until the topping is crisp and golden and the fruit is bubbling.
