Ingredients

1 cup pancake mix

¼ cup butter, unsalted, melted

½ cup granulated sugar

½ cup milk

3 cups peaches, canned, drained, and sliced

½ cup blueberries 

¼ tsp cinnamon, ground

cooking spray

⅓ cup ice cream of your choice, preferably pistachio or vanilla flavored

Preparation

Preheat the oven to 375 degrees F and grease a 9-inch baking casserole with cooking spray.

In a mixing bowl, add the pancake mix, sugar, butter, and milk. Stir with a fork until just combined. Be sure not to over-mix it. Fold in the peaches and transfer them into the baking dish.

Scatter the berries evenly over the batter. Sprinkle with cinnamon and bake for 30 minutes or until golden.

Serve a slice with ice cream on top. Enjoy!
