Ingredients

1lbcarrots

2tbspolive oil

½tspcumin

½tsppaprika

kosher salt and freshly ground black pepper

⅓cupmayo

2tspchipotle,canned

½lime,juiced

Preparation

Heat the oven to 425 degrees F.

Peel the carrots and cut them lengthwise in half, and then in half again

Toss the carrots with olive oil, cumin and paprika. Season with salt and pepper.

Spread the carrots in an even layer on a baking sheet, then bake for 20 minutes, or until tender and crisp at the ends.

In a small bowl, whisk together the mayo, chipotle, and lime juice

Serve the carrot fries with sauce, and enjoy!
