Ingredients
2cupsgraham crumbs
2tbspsugar
⅔cupbutter,melted
24ozcream cheese,softened
1cupsugar
1tspvanilla
3eggs
Preparation
Preheat oven to 350 degrees F.
Mix crust ingredients until well combined. Press into a 9-inch springform pan.
Beat cream cheese, sugar, and vanilla until fluffy.
Add eggs one at a time, beating until just until incorporated. Do not overbeat for this will cause cracks.
Pour the cheesecake into the crust and bake for 35 to 45 minutes or until the center is almost set. It will still be a tiny bit wobbly in the middle.
Remove from oven and cool for 10 minutes. Gently run a knife around the edge of the crust to loosen. Cool for 45 minutes.
Remove the springform pan and cool completely in the fridge for at least 4 hours or overnight.
