Ingredients
2cupschicken,chopped, cooked
2scallions,finely diced
⅓cupmayonnaise
2tbspplain greek yogurt
½red pepper,finely diced
⅓cupwater chestnuts,chopped, or diced celery
2tbspalmonds,chopped, optional
1tspdijon mustard
½tsplemon juice
salt and pepper,to taste
Preparation
Stir together the mayonnaise, Greek yogurt, scallions, Dijon, lemon juice, salt, and pepper.
Toss with the chicken, red pepper, water chestnuts, and almonds to combine.
