Ingredients

cooking spray

1 cup rhubarb, fresh or frozen, cut into 1-inch pieces

1 ⅓ cup sugar, divided

¼ cup salted butter

¾ cup all-purpose flour

1 tsp baking powder

¼ tsp ground nutmeg

⅛ tsp salt

½ cup half and half

¼ cup orange juice

1 tbsp cornstarch

whipped cream, optional for serving

Preparation

Grease the crockpot with cooking spray.

Place rhubarb in the bottom of a crockpot.

Sprinkle the cornstarch and ¾ cup of sugar evenly. Then, drizzle the orange juice over.

In a large bowl, combine flour, baking powder, nutmeg, salt, and the remaining sugar.

Sprinkle the dry ingredients over the rhubarb, completely covering all of it.

Drizzle half and half over the flour mixture.

Sprinkle the butter evenly.

Cover the crockpot and cook it on High for 3 hours.

Serve warm or cold topped with whipped cream. Enjoy!
