Ingredients
2tbspolive oil
1onion,diced
1large carrot,peeled and diced
½cupcelery,finely chopped
4garlic cloves,minced
2cupsham,cooked, shredded
6cupschicken stock,or broth
2bay leaves,or 1 tbsp fresh chopped thyme
3tbspfresh flat-leaf parsley,chopped
15ozwhite beans,rinsed and drained
½tspblack pepper
pinchsalt,if needed
Preparation
In a large pot or saucepan, heat the oil over medium-high heat.
Add the onion, carrots and celery.
Cook for 5 minutes until the onions are softened.
Sauté the garlic for 30 seconds to 1 minute until fragrant.
Add the ham, cook for a further 2 minutes, then pour in the stock.
Add the bay leaves and parsley.
Bring to a boil, then reduce the heat and simmer for 5 minutes.
Stir in the beans, then season with pepper.
Let simmer for 2 minutes, then season with salt, if needed.
Serve warm, and enjoy!
