Ingredients

2 yellow onions, (12 oz), large, cut into thick rings

1¾ cups all-purpose flour

1½ tsp baking powder

1½ tsp salt

2 eggs

1½ cups milk

1½ cups panko bread crumbs

vegetable oil, for frying

dipping sauce, of your choice, and any accompaniments

Preparation

Heat some oil in a deep-fryer at 365 degrees F.

In a small bowl, stir together the flour, baking powder and salt.

Dip the onion slices into the flour mixture until they are all coated and set them aside. Whisk the egg and milk into the flour mixture.

Dip the rings into the batter to coat, then place them on a wire rack for draining until they stop dripping. Place the rack over a baking tray.

Spread the panko bread crumbs on a plate or on a shallow dish. Place the rings one at a time on top of the crumbs, and shake off any excess.

Deep fry the rings a few at a time for 2 to 3 minutes, or until they become golden brown. Drain the onion rings onto a basket lined with kitchen towels.

Serve with your favorite sauce and accompaniments. Enjoy!
