Ingredients

3zucchini,thinly sliced, or shredded

1cupall-purpose biscuit baking mix

4eggs,beaten

½cupbutter,melted

½cupparmesan cheese,grated

½cupmozzarella cheese,or cheddar cheese, shredded

½cuponion,chopped

1tspgarlic,minced

½tsporegano,dried

2tbspfresh parsley,chopped

½tspsalt

¼tsppepper

Preparation

Preheat the oven to 350 degrees F.

In a large bowl, toss the zucchini with the baking mix until well coated.

Add the beaten eggs, melted butter, and parmesan, and mozzarella cheeses.

Using a large spoon or hands, work the mixture together until well blended.

Add the onion, garlic, oregano, parsley, salt, and pepper, and mix again.

Spread the mixture into a 13×9-inch baking pan.

Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.

Serve warm or at room temperature.
