Ingredients
2 tbsp vegetable oil
1 tbsp butter
¼ cup tomatoes, diced
¼ cup red onions, diced
4 oz capsicum, mixed and diced
5 eggs
1 tbsp garlic, minced
1 tbsp coriander powder
1 tbsp paprika powder
1 tsp cumin powder
1 tbsp curry powder
salt and ground black pepper, to taste
cilantro, chopped
Preparation
Beat eggs and set aside.
In a pan, heat oil and butter.
Saute tomatoes, red onion, capsicum, and garlic until cooked evenly.
Add coriander, paprika, cumin, and curry powder. Season with salt and ground black pepper to taste. Stir and cook for about 5 minutes.
Add in the beaten eggs and stir often to scramble the egg.
Serve with pita breads on the side and garnish with chopped cilantro.
