Ingredients
8eggs,large
2cupswhole milk
½tspcoarse ground pepper
4bagels,stale, chopped
¼red onion,chopped
3tbspeverything bagel seasoning,divided
8ozcream cheese,(24 cubes),cubed
1cupgrape tomatoes,quartered
Preparation
Preheat oven to 350 degrees F and spray an 8×10-inch baking dish with vegetable oil spray.
In a large bowl whisk the eggs, milk and pepper together until smooth.
Add in bagels and red onion and 2 tablespoons of the everything bagel seasoning.
Toss gently to combine.
Add half the mixture to the baking dish and dot with half the cream cheese.
Add the remaining bagel mixture to the pan and dot with the remaining cream cheese.
Sprinkle over the remaining 1 tablespoon of everything bagel seasoning.
Bake for 40 to 45 minutes or until golden brown and egg custard is set.
Top with chopped tomatoes to serve.
Optional – serve with lox.
