Ingredients

2tbspcanola oil

1largeonion

1largered bell pepper

2largegarlic cloves

1tbspchili powder

kosher salt and freshly ground pepper,to taste

½*Coriander-Dusted Roast Beef,(see Recipe Notes for recipe) or roast beef

¼cupreserved gravy from the roast beef,or other beef gravy

8flour tortillas,warm

Preparation

In a large skillet, heat canola oil until shimmering. Add onion, bell pepper, garlic, and chili powder and season with salt and pepper.

Cook over high heat for about 5 minutes, stirring, until softened and browned in spots. Add beef and gravy and cook for 1 minute, stirring, until just heated through.

Serve beef and vegetables in warm tortillas with salsa, sour cream, and cilantro.
