Ingredients
¼cupolive oil,(+ 2 tbsp)
3tbspwhite wine vinegar
2tbsphoney
1½tspdijon mustard
1tbspshallot,minced
salt
¾cupdry farro,cooked according to directions on package and cooled
5ozbaby kale
12ozred grapes,halved, (about 2 cups if small or 3 if large)
4ozfeta,crumbled
¾cupwalnuts,chopped and toasted
Preparation
For the dressing – In a jar combine olive oil, white wine vinegar, honey, mustard, shallot and season with salt to taste.
Cover with lid and shake to blend. Chill until ready to serve.
Add kale, cooked farro, grapes, feta and walnuts to a salad bowl. Pour over dressing and toss to evenly coat. Serve immediately.
