Ingredients

1½cupslong grain rice,cooked

¾cupcanned black beans,rinsed and heated

¾cupcorn,cooked

1large tomato,diced

1large scallion,diced fine

4tbspcilantro,chopped

1tbspfresh squeezed lime juice

Salt,to taste

Preparation

In a large bowl, combine hot rice, heated corn, heated beans, tomato, scallion, cilantro, lime juice, and salt if needed.

Toss and serve.
