Ingredients

4½cupsblack beansrinsed and well-drained

2cornshucked

1bell pepperorange, yellow, or red, chopped

1cupcherry tomatoesquartered

1cupred onionchopped

½cupfresh cilantrofinely chopped

1jalapeñomedium, finely chopped

½tsplime zestpreferably organic

2tbsplime juiceto taste

¼cupextra-virgin olive oil

¼cupwhite wine vinegar

½tspchili powder

½tspground cumin

½tspsaltto taste

sliced avocadofor garnish, optional

crumbled fetafor garnish, optional

lime wedgesfor garnish, optional

Preparation

In a large serving bowl, combine all of the ingredients and toss to combine. Taste, and adjust as necessary until the flavors really pop.

Cover and chill for at least 2 hours or overnight to enhance the flavors.

Serve in individual bowls as is, or with any of the garnishes listed.

Leftovers keep well for up to 4 days. Wake up the flavors with an extra squeeze of lime juice or a tiny splash of vinegar.
