Ingredients

3 cups rice, cooked

3 tbsp red wine vinegar

5 tbsp olive oil

1 cup cherry tomatoes, halved

1 can corn, drained

1 cucumber, chopped

salt and pepper

1 lemon

Preparation

Toss all ingredients in a large bowl.

Season with salt and pepper.

Drizzle lemon juice over top.

Add more olive oil if desired.
