Ingredients
2½ozgoat cheese,fresh, creamy, room temperature
1tbsphoney
½tbspextra-virgin olive oil
1½tspapple cider vinegar,fresh
2tsplemon juice
1½tbspwater
Kosher salt and freshly ground black pepper
6cupsmixed baby greens
2medium peaches,ripe, halved, sliced into wedges
2medium plums,ripe, halved, sliced into wedges
24walnut,or pecan halves
Preparation
In a small blender, combine the goat cheese, honey, olive oil, vinegar, lemon juice, water, salt and freshly ground black pepper.
Mix until fully combined and creamy, yielding ½ cup. Refrigerate until ready to use.
Heat a grill pan over medium-high heat.
When hot, spray lightly with oil, then grill the peaches and plums for 1 minute, or until char marks form on the flesh.
Divide the greens between 4 plates, top with the fruit and walnuts, then drizzle 2 tablespoons of dressing over everything.
