Ingredients
3lbroast beef,or eye round beef, all fat trimmed off
4garlic cloves,cut into thin slivers
olive oil spray
kosher salt,to taste
freshly cracked pepper,to taste
2tspdried rosemary,chopped

Preparation
Remove the roast beef from the refrigerator 1 hour before cooking to reach room temperature.
Preheat the oven to 350 degrees F.
Using a sharp knife, pierce the meat about ½-inch deep.
Insert slivers of garlic in each hole, pushing all the way in.
Lightly spray the meat with olive oil, then season generously with salt, pepper, and rosemary.
Place the thermometer all the way into the center of the meat.
Place the beef in a roasting pan then roast it in the oven.
Roast until the thermometer reads 140 degrees F for medium rare.
Remove the roast from the oven, then let it rest for 10 to 20 minutes.
Slice thinly, serve, and enjoy!
