Ingredients

½cupunsalted butter,softened

½cupbrown sugar,packed

½cupmolasses

1tspvanilla

2large eggs

1cupflour

1cupwhole wheat flour

1tspbaking soda

2tspground cinnamon

2tspground ginger

1tspground cloves

½tspsalt

1cupbuttermilk

1tbspcoarse sanding sugar

Preparation

Preheat the oven to 350 degrees F and spray a 9×5-inch baking pan with baking spray.

In a stand mixer, cream the butter and brown sugar together until light and fluffy.

Add in the molasses and eggs until well blended (molasses will make the mixture grainy, don’t worry about this).

Sift together whole wheat flour, flour, baking soda, cinnamon, ginger, cloves, and salt.

Add the dry ingredients and buttermilk, alternating half and half to the stand mixer on the lowest speed until just combined.

Add the mixture to the loaf pan and spread evenly, then sprinkle with coarse sanding sugar.

Bake for 50 to 55 minutes or until a toothpick comes out clean.
