Ingredients

½cupsugar

¼cupbrown sugar

½cupbutter,softened

1egg

1tspvanilla

1⅓cupsflour

¾cupgraham cracker,crumbs

1tspbaking powder

½tspsalt

1cupchocolate chips

1cupmini marshmallows,or jet puff marshmallows

Preparation

Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper and spray lightly with cooking spray.

In a medium sized mixing bowl, cream together butter, brown sugar, and sugar until it is light and fluffy 2 to 3 minutes. Add in the egg and vanilla and mix until incorporated.

In a food processor, or using a gallon sized bag and rolling pin, crush up the graham crackers until they are fine crumbs.

In a separate bowl, add the graham cracker crumbs, flour, baking powder, and salt and whisk together. Slowly add the dry ingredients to the wet and mix on low until it is combined.

Fold in the chocolate chips and marshmallow bits. Scoop a heaping tablespoon of dough onto the cookie sheet. Bake for 10 to 12 minutes.
