Ingredients
3 hamburger buns
1 large tomato, sliced
1 oz arugula leaves
2 tbsp olive oil
1 lb ground turkey
1½ cups crumbled feta cheese, divided
½ cup olives, chopped
1 tsp dried oregano
1 tsp Italian seasoning
1 tsp dried parsley
1 tsp dried basil, optional
1 tsp onion powder
½ tsp garlic powder
ground black pepper, to taste
2 cups plain Greek yogurt or sour cream
1 large English cucumber
3 garlic cloves, finely minced
½ cup olive oil
1 tbsp red wine vinegar
1 tbsp fresh dill, chopped, or 1 tsp dried
Preparation
Using a box grater, grate the cucumber on the coarse side.
Place the grated cucumber in the middle of a kitchen towel. Squeeze out as much juice as possible.
Place the grated cucumber in a bowl. Add the rest of the ingredients for tzatziki sauce. Mix together and chill until ready to use.
In a bowl, combine turkey, 1 cup of feta cheese, olives, oregano, Italian seasoning, parsley, basil, onion powder, garlic powder, and black pepper. Mix well.
Divide the meat mixture into 3.
Shape them into about 4-inch wide patties.
Make a dent by pressing your thumb finger in the middle of each patty.
Heat up the cast iron skillet, grill, or griddle on medium. Drizzle olive oil.
Cook the burgers for 7 minutes per side, flipping only once.
Once done, set aside.
In the same pan, toast the hamburger buns for 1 to 2 minutes or until golden brown.
Place one burger on each bottom hamburger bun. Place 2 tablespoons of tzatziki sauce, two sliced tomatoes, two arugula leaves, and the remaining crumbled feta on top of each.
Serve with the top bun and extra tzatziki sauce on the side. Enjoy!
