Ingredients
2anchovies,oil packed
1clovesmall garlic
½cupflat leaf parsley leaves,packed
¼cupbasil leaves,packed
¼cupdill,coarsely chopped
1tbsporegano leaves
¾cupmayonnaise
2½tbspfresh lemon juice
2tbspchives,snipped
kosher salt and freshly ground pepper
1ciabatta bread loaf
1rotisserie chicken
8piquillo peppers
3celery ribs,inner, with leaves
½cupkalamata olives,pitted
Preparation
In a food processor, pulse the anchovies, garlic, parsley, basil, dill, and oregano until coarsely chopped.
Add the mayonnaise and lemon juice and process until smooth. Fold in the chives; season with salt and pepper.
In a large bowl, toss the ciabatta with the chicken, piquillo peppers, celery, and olives. Add the dressing and toss to coat.
Season with salt and pepper and serve.
