Ingredients
1cupgreen lentils,rinsed
2cupswater
1tspsalt
2tbspcanola oil
1cupcelery,finely chopped
1red onion,finely chopped
1tbspfancy molasses
1tspground ginger
1tspdry mustard
1tbspcanola oil,or as needed
Preparation
Combine the water, lentils, and salt in a saucepan, then bring to a boil, reduce heat to medium, and cook for 20 minutes until all the water has been absorbed and lentils are nicely cooked. Transfer to a large bowl.
Mash the lentils with a potato masher, then set aside.
Heat 2 tablespoons of canola oil in a skillet over medium-high heat. Sauté the celery and red onion in hot oil for 5 to 7 minutes until tender.
Drain and discard excess oil and transfer celery and onion to a bowl.
Stir the molasses, ginger, and mustard together in a small bowl, then stir into the celery mixture until the celery and onion are evenly coated.
Stir the celery mixture into the mashed lentils. Shape the lentil mixture into 6 patties.
Heat 1 tablespoon canola oil in a skillet over medium heat, then fry the patties in hot oil hot for 5 to 7 minutes per side until firm in the center.
Serve in burger buns, and enjoy!
